College Girl Can Eat | Energy Bites

Happy First Saturday of April Friends! 

Today I'm going to share a quick and easy, no bake recipe. This recipe is perfect for everyone. Whether if it's having a snack for your kids before they attend practice or you need a late night snack before bed, these cranberry almond bites are an easy fix! 

I've made a few different energy bite recipes, peanut butter chocolate chip, others with a lemon twang, etc but I think these Cranberry Almond are my favorite! They're just the right amount of sweet with a satisfying crunch.

Here's what you'll need! 
(Recipe yields about 12-14 Power Balls)
1 Cup Old Fashion Oats
1/2 Cup Almonds, Chopped
1/3 Shredded Coconut (sweetened or unsweetened)
1/3 Dried Cranberries
1/4 teaspoon cinnamon
1 Tablespoon Chia Seeds
3/4 Cup Peanut butter (or nut butter of your choice)

How to Make Them:
Once you have all of your ingredients measured out, put all the dry ingredients together in mixing bowl & stir. Then mix in the peanut butter until evenly mixed!
Once you're done mixing then roll into 12-14 balls and place onto a parchment paper lined cookie sheet. Stick the rolled balls in the freezer for 3 or so hours so they can bind together.

When they're frozen nicely I place them into an individual container and leave them in the freezer!

Where to store:
I keep my energy bits in the freezer in a glass tupperware. I don't eat mine as quick, as say a family of 3 or 4 so to keep them fresher longer I like mine in the freezer. Most people keep theirs in the fridge though and that works just as good. I think it ultimately depends on how quick they'll be eaten.

These are the easiest little snack before working out (you could easily add a protein powder to your mixing bowl.) They're also perfect for if you have kids that are starving when you pick them up from school or practice. When we went snow skiing over winter break my mom had these on hand at all times because we were always so hungry!
